 I’m not much for traditional potato salad (I usually find it too mayonnaise-y), but this is a delicious salad that happens to have potatoes in it. Better yet, it makes use of some of summer’s tasty produce and the lemon finish keeps things light and bright.

I’m usually more of a full-bodied, thick, still-has-some-small-pieces mashed potato sort of gal. But I was feeling fancy for my birthday and decided to give potato puree a try. Oh, friends. These were TO DIE FOR. Even the leftover potatoes stayed creamy and delicious (I don’t know about you, but that NEVER happens for me).

I can’t help it. I’ve been loving roasted potatoes. First, those delicious smoked paprika potatoes, now these yummy, crispy parmesan ones. Why, yes, the temperatures are still in the triple digits?
