Orange Triple Berry Muffins I One Lovely Life
It was my turn to bring treats to my Computer Applications in Health Education class (Yes, my college class was THAT cool), and at 9AM, I really didn’t think anyone would be up for anything too rich, so I decided to make muffins.

I wanted something bright and light and fluffy and delicious. So I researched a bit, combined a few recipes, and came up with something amazing.

Orange Triple Berry Muffins

Ingredients:
juice and zest of one orange
about 3/4c buttermilk
2 eggs
3 Tbsp honey
6 Tbsp butter, melted
1/3c sugar
2 1/2 tsp baking powder
1/4tsp baking soda
1/4tsp salt
2c flour
1/2-2/3c EACH blueberries, raspberries, and strawberries

Directions:
In a large bowl, combine zest and sugar with your fingers until very fragrant and well combined. It should look like this:

Stir in baking powder, baking soda, salt, and flour. In large liquid measuring cup, combine juice of orange (should be about 1/4c) and enough buttermilk to make 1 cup. Stir in honey. Add in eggs one at a time and stir well. Stir in butter. Add to dry ingredients. Stir quickly until JUST combined (overmixing makes for dry muffins…ew). Fold in berrie

Pour into sprayed muffin cups or paper liners.

Bake at 400 degrees 22 to 25 minutes or until done.

Makes 12 muffins
