The dust is starting to settle and there’s more house than cardboard to be seen around here! Woot! We’re celebrating by eating home-cooked meals again instead of fruits, veggies, and cereal.

This was our kitchen’s inaugural meal, and it’s one of Michael’s new favorites.

It just so happened that right when we were changing our diet, Gwyneth Paltrow’s newest cookbook, It’s All Good came out. I had enjoyed My Father’s Daughter, so I was just excited to read through and see if there was anything interesting. Lo and behold, the new book is based around elimination diet! For health reasons, Gwyneth Paltrow went through an allergen elimination diet and the book is full of dairy-free, gluten-free, (and many more things-free) foods that look and taste delicious.

I adapted her meatball recipe and her hoisin sauce recipe a bit to suit our tastes, and it’s absolutely fabulous. We’ve perfected our version over a few tries, and we can’t get enough. Feel free to serve it with rice if you please, but we like it best with a heaping vegetable stir-fry on the side. Light but filling, tasty, and just a little bit different, we think (and hope) you’ll like it too.

Notes on the recipe: we buy Eden Organic Genmai Miso Paste, which is a brown rice and soy miso (dairy and gluten free). We’ve found it at Sprouts stores and at Amazon. As for five-spice powder, there are lots of recipes out there if you’d like to make your own, but we’ve been happy with McCormick’s version.

Ginger Chicken Meatballs with Lee’s Hoisin Sauce

Ingredients

Scale

For the Meatballs:

  • 1 1/2 lbs ground chicken breast
  • 1 1/2 Tbsp gluten free Tamari (or soy sauce if not gluten free)
  • 1 Tbsp pure maple syrup
  • 2 tsp fresh ginger, finely grated or minced
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper

For the Sauce:

  • 1/2c red miso paste
  • 1/2c pure maple syrup
  • 1/2c water
  • 2 Tbsp rice vinegar (or 1 1/2 Tbsp cider vinegar)
  • 1 tsp Chinese five spice powder
  • 1 clove garlic, minced

For Serving:

  • 2 green onions, sliced

Instructions

For the Meatballs:

  1. In a large bowl, combine chicken, Tarmari, syrup, ginger, garlic, salt, and pepper. With a fork or your hands, toss until well mixed. If you have time, refrigerate mixture 15-30 minutes. This will help the meatballs hold their shape a bit better. (I use this time to make the sauce).
  2. Scoop or roll out the mixture into 1 1/2″ meatballs (I use a small cookie scoop for this job). Place meatballs on a baking sheet lined with foil. Bake meatballs at 400 degrees for 12-15 minutes, or until cooked through.

For the Sauce:

  1. In a medium saucepan, combine miso, syrup, water, vinegar, five spice powder, and garlic. Bring to a boil over medium heat and cook an additional 3-5 minutes, or until slightly thickened.

For Serving:

  1. Toss meatballs in sauce (or scoop sauce into small bowls for dipping) and top with green onions.

Notes

*Gluten & Dairy Free Notes: Be sure that your miso paste is gluten and dairy free. We like Eden Organic Genmai Brown Rice & Soy Miso Paste.

  1. I testify of their amazingness. I was there in the new house when she first made them and OH BABY. SO yummy!

  2. I made these for dinner tonight. The meatballs themselves are so flavorful, they really do not even need a sauce. I used dark meat ground chicken thighs. I think next time I will eliminate the salt from the meatball recipe. I did, however, make a half batch of the teriyaki sauce from Mel’s Kitchen Cafe and used that as a dipping sauce. I thought it might be more mainstream for my boys and husband. They loved them and so did I. Thank you!!!
