Brown Sugar Snickerdoodle Blondies

For the blondies:

  • 1c butter, softened
  • 2c brown sugar
  • 2 eggs
  • 1 Tbsp vanilla
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 2/3c flour
  • For Cinnamon-Sugar Topping:
  • 2 Tbsp sugar
  • 2 tsp cinnamon


  1. In a large bowl, cream together butter and brown sugar for 2-3 minutes or until light and fluffy. Add eggs one at a time, incoporating well after each addition. Stir in vanilla and beat until smooth.
  2. Add baking powder, salt, cinnamon, nutmeg, and flour to the butter/sugar mixture and stir until just combined. Pour batter into a lightly greased 9×13″ baking dish (I recommend also lining it with parchment paper for easier cutting later). Batter will be quite thick. Spread with a spatula and/or pat down with lightly wet fingertips.
  3. In a small bowl, combine cinnamon-sugar topping ingredients together. Sprinkle evenly over the cookie batter.
  4. Bake cookie bars at 350 degrees for 20-25 minutes, or until cookies are just set in the middle. (The top will have slight resistance when gently pressed) Cool completely before cutting into 20-24 bars.
