I love pretty much any dinner in a bowl.

A nice bed of rice or veggies, some protein, a little freshness, maybe a sauce or dressing? I’m in.

Whether it’s a bowl of butter chicken with fresh broccoli or green beans, island rice bowls, or sweet potato burrito bowls like these, I love that it’s an all-in-one kind of meal. I also love that everyone can make their bowl the way they like it, which means less fussing or fighting at the table.

Here’s all you need to get started on these chipotle sweet potato burrito bowls…

START WITH THE SWEET POTATOES! HERE’S WHAT GOES INTO MY ROASTED CHIPOTLE SWEET POTATOES…

DICED SWEET POTATOES. Diced sweet potatoes are the backbone of these sweet potato burrito bowls. You can use any variety of sweet potatoes you like, then you’ll toss them with things like…

CHIPOTLE CHILI POWDER. A little bit smoky, a little bit savory, a little bit spicy. Chipotle chili powder gives these potatoes some kick and makes the flavor amazing.

CUMIN. Then, to play up the Tex-Mex flavors even more, I like to add some cumin. It’s lovely with the chipotle chili powder.

SALT. Lastly, chipotle sweet potatoes wouldn’t be the same without salt!

NOW, BUILD A BOWL! HERE’S WHAT YOU CAN ADD TO MAKE SWEET POTATO BURRITO BOWLS

You can easily serve chipotle sweet potato burrito bowls to a group with all kinds of dietary needs or restrictions. Serving someone paleo or doing a Whole30? They can build a bowl with chicken, beef or pork, veggies, guacamole, and cauliflower rice. Vegans and vegetarians can fill their bowls with beans, rice, sweet potatoes, and fresh veggies.

BLACK BEANS OR PINTO BEANS. Beans are a great pairing with sweet potatoes and do a great job adding some plant-based protein to the dish. We love these easy Instant Pot black beans! 

RICE OR CAULIFLOWER RICE. Rice or cauliflower rice make a great bed for burrito bowls. Try our arroz verde (green rice), cilantro-lime rice, or cauliflower rice!

LETTUCE OR SLAW. I love the fresh crunch of some lettuce or slaw in my sweet potato burrito bowls. My honey lime cilantro slaw is my all-time favorite to add to bowls and tacos!

SALSA + GUACAMOLE + OR A YUMMY DRIZZLE. Then, you can dress this up with some extra flavor boosters like:

FRESH HERBS OR VEGGIES. Feel free to add extras like grilled peppers and onions, cilantro, corn, etc. You can add anything you like!

TIPS & TRICKS FOR THE BEST SWEET POTATO BURRITO BOWLS:

ARE THESE SWEET POTATOES SPICY? Everyone has their own spice tolerance, but I’d say these definitely have some kick to them. If you have kids with extra sensitive tastebuds, or don’t tolerate spice well, you may want to decrease the chipotle powder to 1/4 tsp instead of 1/2 tsp. or you can simply use regular chili powder instead.

I DON’T HAVE CHIPOTLE CHILI POWDER. CAN I USE REGULAR CHILI POWDER INSTEAD? You sure can! They won’t be as spicy, but they will definitely taste delicious.

I’VE GOT A MEAT-LOVER IN MY HOUSE. COULD I ADD MEAT TO THESE? Absolutely. Here are the three proteins I’d recommend:

Ingredients

FOR THE CHIPOTLE SWEET POTATOES:

  • 2 large sweet potatoes (about 1.5 lbs.), diced (about 6 cups)
  • 2 Tbsp olive oil
  • 1/2 tsp chili powder
  • 1/81/4 tsp. chipotle chili powder
  • 1/4 tsp cumin
  • 1/41/2 tsp salt (or, to taste)

FOR THE BURRITO BOWLS:


Instructions

FOR THE CHIPOTLE SWEET POTATOES:

  1. Preheat oven to 400 degrees F
  2. In a large bowl, stir together sweet potatoes and olive oil. Sprinkle with chili powder, chipotle chili powder, cumin, and salt and stir to coat.
  3. Spread seasoned sweet potatoes out onto a baking sheet and roast at 400 degrees for 20-25 minutes, stirring every 10 minutes or so.
  4. Serve plain or build into burrito bowls.

FOR THE BURRITO BOWLS:

  1. Spoon rice or cauli rice, roasted sweet potatoes, and beans into a bowl.
  2. Add your favorite toppings–lettuce or slaw, tomatoes, avocado, peppers, corn, etc.
  3. Drizzle or dollop with salsa, guacamole, or tomatillo ranch dressing

    1. Lucy – Not a silly question at all! They’re just canned black beans that I rinsed off. You could stir in a spoonful or two of salsa if you want to jazz them up a bit, but I found that the sweet potatoes were kind of the star of the show.

  3. Making this tonight for my vegetarian friend… can’t wait! But question: do you serve the sweet potatoes and/or cauliflower rice still warm or do you let cool first?

    1. Austyn – It’s totally personal preference. I usually serve it when it’s warm, but it’ll be delicious at room temperature, too.:)

  6. I’m going to try this but was wonderingi you had tried it using an air fryer? I live full-time in my RV and haven’t mastered my oven.

    1. I haven’t made them in an air fryer yet, but I TOTALLY think they’d work! I’d recommend that you use similar roasting instructions (same basic time and temperature). Just stop to shake the potatoes around a few times during the cooking for even browning. And depending on the size of your fryer, you may need to add a few extra minutes to the cook time πŸ™‚ Can’t wait to hear how it goes!
