I love pretty much any dinner in a bowl.
A nice bed of rice or veggies, some protein, a little freshness, maybe a sauce or dressing? I’m in.

START WITH THE SWEET POTATOES! HERE’S WHAT GOES INTO MY ROASTED CHIPOTLE SWEET POTATOES…
DICED SWEET POTATOES. Diced sweet potatoes are the backbone of these sweet potato burrito bowls. You can use any variety of sweet potatoes you like, then you’ll toss them with things like…

CHIPOTLE CHILI POWDER. A little bit smoky, a little bit savory, a little bit spicy. Chipotle chili powder gives these potatoes some kick and makes the flavor amazing.
CUMIN. Then, to play up the Tex-Mex flavors even more, I like to add some cumin. It’s lovely with the chipotle chili powder.
SALT. Lastly, chipotle sweet potatoes wouldn’t be the same without salt!

You can easily serve chipotle sweet potato burrito bowls to a group with all kinds of dietary needs or restrictions. Serving someone paleo or doing a Whole30? They can build a bowl with chicken, beef or pork, veggies, guacamole, and cauliflower rice. Vegans and vegetarians can fill their bowls with beans, rice, sweet potatoes, and fresh veggies.
BLACK BEANS OR PINTO BEANS. Beans are a great pairing with sweet potatoes and do a great job adding some plant-based protein to the dish. We love these easy Instant Pot black beans!
RICE OR CAULIFLOWER RICE. Rice or cauliflower rice make a great bed for burrito bowls. Try our arroz verde (green rice), cilantro-lime rice, or cauliflower rice!
LETTUCE OR SLAW. I love the fresh crunch of some lettuce or slaw in my sweet potato burrito bowls. My honey lime cilantro slaw is my all-time favorite to add to bowls and tacos!
SALSA + GUACAMOLE + OR A YUMMY DRIZZLE. Then, you can dress this up with some extra flavor boosters like:
- Salsa or Pico de Gallo
- Guacamole or avocado
- A savory drizzle like my Southwest Ranch, Tomatillo Ranch Dressing, or Cilantro Lime Ranch.
FRESH HERBS OR VEGGIES. Feel free to add extras like grilled peppers and onions, cilantro, corn, etc. You can add anything you like!
TIPS & TRICKS FOR THE BEST SWEET POTATO BURRITO BOWLS:
ARE THESE SWEET POTATOES SPICY? Everyone has their own spice tolerance, but I’d say these definitely have some kick to them. If you have kids with extra sensitive tastebuds, or don’t tolerate spice well, you may want to decrease the chipotle powder to 1/4 tsp instead of 1/2 tsp. or you can simply use regular chili powder instead.
I DON’T HAVE CHIPOTLE CHILI POWDER. CAN I USE REGULAR CHILI POWDER INSTEAD? You sure can! They won’t be as spicy, but they will definitely taste delicious.
I’VE GOT A MEAT-LOVER IN MY HOUSE. COULD I ADD MEAT TO THESE? Absolutely. Here are the three proteins I’d recommend:
