mom’s creamy mashed potatoes and pea gravy

Growing up, there were a few recipes that I could count on my mom making when the weather turned colder. Without a doubt, we would see her vegetable cheese soup, white taco soup, and mashed potatoes with creamy pea gravy.

It’s the epitome of comfort food to my mom, and I’d be lying if I told you I didn’t get the warm fuzzies when I eat it and think of her with every creamy bite.

This meal is perfect to use as your meatless meal of the week if you’re into that sort of thing (like I am), and most of the time, it can be made from ingredients you have in your pantry.

It goes really well with my sweet carrots and onions (another great recipe from my mom). If you don’t think it will satisfy you as a main dish, serve it as a side dish to accompany ham. Di-vine.

Mom’s Creamy Pea Gravy

Ingredients:
2Tbsp butter
2Tbsp flour
1/2tsp salt pepper to taste
1(12 fl oz) can low-fat evaporated milk or 1 1/2c regular milk
1/2lb frozen peas (don’t thaw)

Directions: In a medium saucepan, melt butter. Stir in flour and salt. Cook over medium heat until golden. stir in milk. Continue to cook over medium heat, stirring very often until sauce has thickened to coat your spoon.

If the sauce bubbles a bit and gets thicker than you’d like, feel free to thin it with more milk. Taste and season with salt and pepper as desired. When sauce has reached desired consistency, stir in peas. Just heat through.

Serve over your favorite mashed potatoes (I recommend making mashed red potatoes with the skins on. I boil them till they’re tender, then mash them with a little salt and pepper, skim milk, a pat of butter, and sometimes a dollop of sour cream.)

Serves 4-6
