We’re inching toward the holidays, and one of my biggest requests this year was appetizers + party food.

Last year, after I posted our favorite spiced candied nuts, several folks requested a savory version, and these sea salt rosemary nuts are here to deliver!

This rosemary nut mix is a savory, salty combination that can work as a snack, appetizer, party food, or holiday gift for neighbors and friends. It just takes a handful of ingredients and about 20 minutes to put together. It’s the easy, delightful, utterly snackable recipe you’ll want to try this season! Here’s what I put in them…

HERE’S WHAT I PUT IN MY ROSEMARY NUT MIX:

Other than the delicious flavor, my favorite part about these sea salt rosemary nuts is how simple and straightforward they are to make. It’s just a handful of easy ingredients that make for incredible flavor! Here’s what I put in my rosemary nut mix:

MIXED NUTS. We use 3 cups of raw mixed nuts in our rosemary nut mix. I like a combination of almonds, pecans, and cashews, but you can really experiment with options! Hazelnuts, walnuts, peanuts, brazil nuts, etc. would all work. You’re just looking for raw, unsalted nuts.

OLIVE OIL. Since we’re working with raw nuts, I add a little bit of olive oil to the nut mixture. It’ll help blend the flavors and toast the nuts more evenly. You can use your favorite plain olive oil (this is my fave), or get fancy by adding a flavored olive oil (like this or this).

SALT & PEPPER. Simple, but WOW do they make a difference. Plenty of salt really makes these amazing.

FRESH ROSEMARY. Fresh rosemary is the star of the show in this rosemary nut mix! I love the bright flavor and the tiny pop of color.

FAQ + TIPS FOR THESE SEA SALT ROSEMARY NUTS MIX

A SECRET TO AMP UP THE FLAVOR EVEN MORE…If you have time, you can also boost the flavor by heating the olive oil gently over low heat with the rosemary for a few minutes before adding it to the mixed nuts. The heat will help the rosemary release its essential oil and will infuse the oil and distribute the flavor even more! Or, you can rub the minced rosemary into the salt a bit to get the oils into the salt.

TRY FLAVORED OLIVE OIL. Or, you can play around a bit with the flavor by adding flavored olive oil. I love this rosemary olive oil, but this fresh crush basil oil is also amazing! (Save 10% on your first order with code “onelovelylife”)

LIKE A LITTLE SWEETNESS? If you crave the savory + sweet combination, you can try to mix in a teaspoon or two of brown sugar or pure maple syrup before roasting.

WANT SOME KICK? Or, if you want a bit of kick in your rosemary nuts, try adding a pinch or two of cayenne before roasting.

FAQ + TIPS FOR THESE ROSEMARY SEA SALT NUTS

CAN I USE DRIED ROSEMARY INSTEAD? Yes, though I prefer fresh (the flavor is so much brighter). If you are going to use dried rosemary, you’ll want to use about 1 teaspoon (possibly 2 tsp. if your dried rosemary isn’t very strong)

HOW LONG WILL THESE KEEP? My sea salt rosemary nuts keep about 1 week stored in an airtight container at room temperature. To help them last longer, you can store them in the refrigerator or freezer. (I like to reheat mine a bit in the oven before serving if they’re cold.)

CAN I USE OTHER NUTS? Absolutely! Brazil nuts, hazelnuts, walnuts, etc. would all be delicious in this rosemary nut mix. Use what you like, just stick to about 3 cups total.

WHERE TO GET NUTS FOR LESS $$$. Nuts can be expensive, but some of my favorite places are Costco (the best for buying in bulk), Trader Joe’s (for smaller amounts), Thrive Market or Nuts.com. Sprouts also carries nuts in bulk bins, so you can buy exactly how much you need, which can help you save.

TRY GIFTING THESE! Rosemary nuts are a great little neighbor or friend gift around the holidays! I like to pack them in little treat bags with a cute ribbon.

Sea Salt Rosemary Nuts – This savory rosemary nut mix is perfect for gifting or parties! (Paleo, Gluten Free, Whole30 & Vegan) 


Ingredients

Scale
  • 1 cup almonds
  • 1 cup cashews
  • 1 cup pecans
  • 1 1/2 Tbsp. olive oil
  • 2 Tbsp. fresh rosemary, minced*
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • pinch garlic powder (optional)

Instructions

  1. Preheat the oven to 325 degrees F.
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. In a large bowl, combine almonds, cashews, and pecans.
  4. Drizzle with olive oil and sprinkle with rosemary, salt, pepper, and garlic powder (if using)
  5. Stir to combine well.
  6. Pour the nuts out onto the baking sheet and spread out so they’re pretty evenly distributed.
  7. Bake at 325 degrees 10 minutes. Stir the nuts and return to the oven for another 5-10 minutes, or until golden toasted.
  8. Remove from oven and cool a few mintues before enjoying! Eat immediately or store in an airtight container if needed until ready to serve.

Nuts will keep at room temperature about 1 week, or several weeks in the refrigerator or freezer.

Notes

*For extra flavor, you can rub the minced rosemary into the salt with your fingers (it’ll distribute the rosemary oil into the salt) OR you can heat the olive oil with the minced rosemary and salt over low heat for a few minutes to infuse the olive oil before drizzling it over the nuts.
