Summer Cherry Cake


  • 1/2c butter, softened
  • 3/4c sugar
  • 2 eggs
  • 2tsp vanilla
  • 2tsp almond extract
  • 1/2tsp salt
  • 1tsp baking powder
  • 1c flour
  • 2c cherries, pitted


  1. Cream butter and sugars. Beat in eggs, one at a time until well incorporated. Stir in vanilla and almond extracts. Sift in salt, baking powder, and flour and stir until just combined.
  2. Pour batter into a sprayed 8″ cake pan and poke cherries through the batter, pushing to all different levels.
  3. Bake at 350 degrees for 30-35 minutes or until a toothpick comes out clean.
  4. Sprinkle with powdered sugar and serve.
