Description

Fresh Mango Salsa – This mango salsa makes just about anything taste better! It’s the perfect blend of spicy and sweet. (Naturally gluten-free, vegan, and paleo)

Ingredients

Scale
  • 2 cups diced mango (about 2 red or 3 yellow mangos)
  • 1/4 cup finely minced red onion
  • 12 Tbsp. finely minced jalapeño
  • 23 Tbsp. minced fresh cilantro
  • 1/4 tsp. salt (or, to taste!)
  • Juice of 1/21 lime (12 Tbsp.)

Optional extras: 1 avocado, 1 red bell pepper, 1/8-1/4 tsp. chili powder, 1/8 tsp. chipotle chili powder.

Instructions

  1. In a large bowl, combine mango, red onion, 1 Tbsp. jalapeño, cilantro and salt.
  2. Drizzle with 1 Tbsp. lime juice.
  3. Stir to combine, then taste.
  4. Add additional jalapeño, lime juice, or salt, as desired!

Salsa is best within a few hours of being made, but will keep 2-3 days in the refrigerator (it will continue to soften.)
