Need a simple side salad recipe to go with your meal? Our Gluten-Free House Salad is the perfect easy green salad recipe for almost any dinner!


Ingredients

For The Vinaigrette Dressing:

  • 3 Tablespoons Fresh Lemon Juice
  • 1/2 Tablespoon Red Wine Vinegar
  • 1/4 teaspoon Dijon Mustard
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup extra virgin olive oil

For The Green Salad:*

  • 68 cups Romaine Lettuce, chopped (can sub green leaf lettuce or spring mix)
  • 1/2 cup Sliced Cucumbers
  • 1/2 cup Grated Carrots
  • 1/2 cup Grape Tomatoes, cut in half
  • Generous pinch salt & pepper (about 1/8 teaspoon each)
  • 1 cup Gluten-Free Croutons

Instructions

First, Make The Vinaigrette Dressing:

  1. Juice The Lemons. If you haven’t already, squeeze the fresh lemon juice and remove any seeds.

  2. Combine. Add lemon juice, vinegar, Dijon mustard, oregano, salt, and pepper to a mason jar or small mixing bowl. Whisk to combine until well blended.

  3. Whisk In Olive Oil. Slowly drizzle in the olive oil while you whisk. Adding the oil gradually helps you incorporate it better.

  4. Taste & Adjust. Then, taste the dressing. Add additional salt, pepper, herbs or lemon juice, if desired. Dressing will keep up to 1 week in the refrigerator. 

Next, Build The Salad:

  1. Combine The Veggies. In a large bowl, combine lettuce, cucumbers, carrots, and tomatoes (along with any other veggies you plan to add). 
  2. Dress the salad by pouring 2-3 Tablespoons of salad dressing over the lettuce & veggies. Gently toss the salad with forks or tongs to coat the veggies with dressing, adding more salad dressing if needed. 
  3. Season the salad with a generous pinch of salt and pepper. 
  4. Finish The Salad. Sprinkle with croutons, if using. (Along with any cheese or crispy mix-ins, like crisped bacon, nuts/seeds.) 

To Make This Salad Ahead Of Time: If you want to make this salad in advance or get it ready for meal prep, it works best to store the dressing in a separate container and the croutons separately. You can combine the veggies in advance, mix up the dressing, and set out the croutons, but wait to toss everything together until right before serving for best results.

*Adjust To Taste! The salad ingredients amounts are suggestions that you can easily scale up or down to suit your taste. Prefer more carrots? Add some! Want fewer croutons? Add less!
