Description

Pineapple Acai Bowls – Cool, refreshing pineapple acai smoothies are poured into bowls and topped with goodies. They’re sweet, fresh, and perfect for a hot day. Don’t miss our big list of topping ideas to try! (Vegan, Paleo)


Ingredients

FOR THE PINEAPPLE ACAI BOWLS:

  • 2 packets acai puree (I prefer unsweetened)
  • 1 1/2 cups frozen pineapple
  • 1 cup frozen strawberries
  • 1/2 banana (or 1/2 cup mango)
  • 1 cup orange juice
  • Water, to blend (if needed)

TOPPINGS TO TRY: fresh berries, pineapple, mango, coconut chips, granola, chopped almonds, hemp seeds,


Instructions

  1. Run acai packets under water for a few seconds to help loosen them up. Cut the packets open and add to a blender.
  2. Add frozen pineapple, frozen strawberries, banana (or mango), and orange juice to the blender.
  3. Cover and puree, stopping to scrape down the sides regularly, until the mixture is smooth and frosty. If your blender is having difficulty blending the mixture, add a little water 1-2 Tbsp. at a time until it blends smoothly. (Try to add as little additional liquid as possible to keep your acai bowls nice and thick.)
  4. Pour smoothie out into bowls and top with your favorite toppings.

Notes
