Pineapple Coconut Lime Smoothie



  • 3 cups frozen pineapple
  • 1 cup full-fat coconut milk (or more, as needed)
  • zest and juice of 1 lime


  1. Place all ingredients in the blender. Puree until completely smooth, adding more coconut milk as needed.
  2. (If desired, add 1/2-1 cup spinach to this recipe to make it a green smoothie.)
  3. To make popsicles: pour smoothie into popsicle molds, insert sticks, and freeze 3-4 hours or until frozen solid.
