Description

Creamy coconut meets tropical tang in this delicious pineapple coconut lime smoothie recipe!


Ingredients

Scale
  • 3 cups frozen pineapple
  • zest of 1 lime
  • 2 Tablespoons fresh lime juice (from 1 lime)
  • 4 Tablespoons collagen protein or 2 Tablespoons chia seeds
  • 1 cup full-fat coconut milk (or more, as needed)
  • 1/2-1 cup water (as needed, to help it blend)
  • Optional: 1-2 cups baby spinach


Instructions

  1. Combine. Place frozen pineapple, lime zest, lime juice, collagen or chia seeds, and coconut milk (and spinach, if using) in the blender. Add about 1/2 cup water to help it blend.
  2. Puree until smooth, adding water as needed to help it blend smoothly.
  3. Serve. Pour into glasses and enjoy!

Notes

  • Zest Before You Juice! For best results, zest the lime BEFORE you get the juice. It’ll make the lime easiest to work with!
