Strawberry Lemonade Popsicles (Vegan or Paleo!)

Description

Strawberry Lemonade Popsicles – These fresh, bright popsicles are made from healthy ingredients and taste AMAZING. They’re a perfect healthy snack to cool off with on a hot summer day! (Paleo or Vegan)


Ingredients

Scale
  • 3 1/2 cups fresh or frozen strawberries (thawed, if frozen)
  • 1/4 cup fresh lemon juice (from 2 lemons)
  • 23 Tbsp. honey or agave (adjust, to taste)
  • 3/4 cup water, to blend

Instructions

  1. Place strawberries, lemon juice, 2 Tbsp. honey, and water in a blender.
  2. Puree until smooth.
  3. Taste and add additional lemon juice or honey, as desired.
  4. Pour into popsicle molds* (a funnel can make this easier!)
  5. Cover with lid (if you have one), and insert popsicle sticks.
  6. Freeze 3-4 hours, or until completely solid & enjoy!

Notes

*IF YOU DON’T HAVE A POPSICLE MOLD: You’ll just need paper cups + popsicle sticks or straws. Pour the mixture into the cups, leaving about 1” at the top for expansion. Cover cups with foil, then poke popsicle sticks or straws through the foil in the center to freeze. (The foil will hold the sticks in place). Freeze till solid, then peel the cup away and toss the cup & foil. (I usually put cups on a tray or cutting board in the freezer to hold them upright)

TIP FOR GETTING POPSICLES OUT OF THE MOLD. Gently run a little cold water on the outside of the mold, then gently wiggle the stick side to side to loosen it from the mold. If it’s not budging, run the mold under water for a few more seconds and try again.

STORING LEFTOVER POPSICLES. I usually transfer frozen popsicles to a freezer bag and store in the refrigerator 1-2 weeks. (They almost never last that long!)
