Description

I’ve found that if I leave all the peels on, it’s a bit gritty, but I hate to lose all that fiber, so I usually peel half the pears. It works like a dream.


Ingredients

Scale
  • 56 large pears (or 67 medium ones), peeled if desired then cored and diced
  • 1/4 cup water (you could also sub in apple cider or apple juice)
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp nutmeg
  • 1/4 tsp vanilla extract

Instructions

  1. Place diced pears, water, cinnamon, cardamom, and nutmeg in a large saucepan. Cover and bring to a simmer over medium heat. Reduce heat to medium low and continue simmering for 15-20 minutes, or until the pears are quite soft.
  2. Let cool, then puree in a blender, food processor (or right in the pot with an immersion blender) until completely smooth.
  3. Makes 1 1/2 quarts
