- 2 Peaches or Nectarines sliced or diced (About 2 cups slices)
- 2 cups strawberries halved or sliced
- 1 cup blackberries
- 1 cup blueberries
- 2 Tablespoons fresh mint finely sliced or minced
- 2 Tablespoons fresh lime juice about 1 lime
- 1 teaspoon honey or agave
Combine. Add peaches, strawberries, blackberries, and blueberries to a large bowl. Sprinkle with fresh mint.
Make The Dressing. In a small bowl, whisk together lime juice and honey/agave until smooth and dissolved.
Drizzle The Dressing over the fruit salad. Gently stir (so you don't crush the peaches).
Serve & Store. Enjoy right away or store in an airtight container in the fridge 1-2 days. The fruit is delicate and will start to soften right away, so we recommend eating this within 1-2 hours of making, for best results.
- A TRICK FOR PEELING PEACHES. A ripe peach tends to peel pretty easily with a good sharp knife, but if you'd like another option blanching peaches in boiling water for a few seconds helps the skins come right off.
