Calling all pizza lovers! This smoky, savory, cheesy pizza is the perfect flavor to try on movie night! Our BBQ Chicken Pizza combines tender BBQ chicken, two kinds of cheese, savory veggies, and fresh finishes you’ll LOVE.

- 1/2 batch gluten-free pizza dough*
- 1/2-1 Tablespoon olive oil
- 1/2 cup gluten-free BBQ sauce, divided
- 1 cup diced or shredded cooked chicken*
- 1 1/2 cups grated mozzarella cheese, divided
- 1/2 cup grated smoked gouda cheese (or sharp cheddar, or more mozzarella), divided
- 1/3 cup thinly sliced or finely diced red onion
- 1/4-1/3 cup roughly chopped fresh cilantro
- Coarse salt
- Black pepper
- Optional Garnish: red pepper flakes, parmesan cheese, or dried parsley
Instructions
- Preheat & Prep. To start, preheat the oven to 425 degrees F. Line a pizza pan or sheet pan with parchment paper, and drizzle with 1/2 Tablespoon olive oil.
- Par-Bake Pizza Crust. Pat the pizza dough out into a 12-inch circle. Bake at 425 degrees F. for 8-10 minutes. (If using store-bought gluten-free crust, you can skip this step. )
- Coat Chicken. Add chicken to a medium bowl, and drizzle with 1/4 cup BBQ sauce. Gently stir to evenly coat the chicken in BBQ sauce. It may not be fully coated, and this is fine!
- Top Pizza. Spread 1/4-1/3 cup of BBQ sauce over the pre-baked crust, leaving a small border around the edge. (Feel free to use a bit more or less sauce here, to taste). Add 1 cup mozzarella cheese and 1/4 cup smoked gouda cheese, followed by the BBQ sauce coated chicken, and sliced red onion. Top with the remaining 1/2 cup mozzarella and 1/4 cup smoked gouda cheese.
- Bake Pizza for 12-14 minutes, or until the crust is just golden brown and the cheese is melted and bubbling.
- Garnish. If desired, brush the freshly baked crust with olive oil. Top the pizza with fresh cilantro, a pinch of coarse salt, and a little black pepper. Feel free to add additional garnish, such as parmesan cheese, red pepper flakes, or parsley, to taste.
- Serve & Store. Cut pizza into 8 slices and enjoy warm. Store leftover pizza in an airtight container in the refrigerator up to 2 days.
Notes
- Gluten-Free Pizza Dough. We highly recommend our gluten-free pizza dough for taste and texture. If you’re using a store-bought gluten-free pizza crust, you can skip the par-baking step, unless it’s recommended on your crust packaging. Not gluten-free? Feel free to use regular pizza dough. .
- Chicken. If you don’t have leftover cooked chicken, feel free to cook a chicken breast and cut it up for this use.
- Cilantro. Can’t stand cilantro? Swap in sliced green onions, snipped chives, or fresh parsley instead!
- Extra Toppings. Feel free to add additional toppings, such as cooked, crumbled bacon, grilled corn, fresh pineapple, green onions or caramelized onions!
- Can I Use Another Gluten-Free Crust? Yes. You can use store-bought gluten-free pizza dough (like Trader Joe’s or Manini’s), or you can use a pre-made gluten-free pizza crust. I do NOT recommend cauliflower crust for this recipe, since the toppings are a bit more substantial and heavy. I find that cauliflower crust can’t stand up to the toppings well.
