Pasta Bruschetta

I like to use Hormel Naturals or Applegate uncured bacon. Use your favorite!


  • 8oz spaghetti (use gluten free, if necessary)
  • 68 slices bacon, diced (be sure bacon is gluten free, if needed)
  • 2 medium tomatoes, diced
  • 1/4c loosely-packed fresh basil, minced
  • 23 Tbsp balsamic vinegar
  • 1 Tbsp olive oil, plus more to taste
  • coarse salt and pepper


  1. Cook pasta according to package directions until al dente, about 8 minutes. Drain. While pasta is boiling, cook bacon in a large skillet until crisp. Drain bacon fat.
  2. Add cooked/drained pasta to the skillet with the bacon. Stir in tomatoes, basil, vinegar, and olive oil. Sprinkle with salt and pepper to taste. Garnish with additional basil, if desired.
  3. Add more vinegar and oil to taste.
