Watermelon Refresher Mocktail

Description

Let’s make a watermelon refresher mocktail! This delicious drink is full of natural electrolytes and no added sweeteners. It’s light, cool, and delicious!


Ingredients

Scale
  • 4 cups cubed seedless watermelon
  • 1 teaspoon lime zest (zest of 1 lime)
  • 3-4 Tablespoons fresh lime juice (from about 2 limes)
  • 1/2 cup coconut water


Instructions

  1. Prep Your Watermelon. If you haven’t already, dice your watermelon. Cut off the stem and and the opposite end of the watermelon and turn it onto one of these flat sides. Use a sharp knife to cut away the rest of the watermelon rind, then cut the watermelon into cubes.
  2. Add Ingredients To The Blender. When the watermelon is ready, add 4 cups of watermelon along with the lime juice, lime zest, and 1/2 cup coconut water to a blender.
  3. Blend To Puree Until Smooth. This won’t take too long since watermelon breaks up easily, but make sure there are no large chunks or sections left.
  4. Strain (If You Want). If you prefer a totally smooth, thinner drink. pour the watermelon juice mixture through a fine mesh sieve to strain out any excess pulp. (I like to leave it in!)
  5. Pour Over Ice. Then, just pour it into glasses filled with ice cubes and serve chilled. Garnish with mint leaves, lime slices, watermelon, etc.

Notes

  • Add Some Tajin. For a tex-mex twist, you can add a Tajin rim or a little pinch of Tajin to the drink. This unique flavor pairing isn’t everyone’s cup of tea, but the chili-lime is a fun addition!
  • Try it With Mint! Try adding some fresh mint leaves! The flavor combination is amazing. 
  • Not Sweet Enough? You can add a little drizzle of agave nectar if needed.
