ROAST SWEET POTATOES. Preheat oven to 400° F. In a large bowl, combine sweet potato cubes, olive oil, chili powder, salt, cumin, and chipotle chili powder. Stir to combine, then spread out in an even layer on a sheet pan. Roast 25-30 minutes, stirring once halfway through cooking.
WHILE POTATOES ROAST, COOK BEEF. Heat 1 tsp. olive oil in a large skillet over medium heat. Add ground beef and cook 8-10 minutes, or until cooked through. If needed, drain extra fat from the pan (I never need to since I use lean beef). Add taco seasoning and any water called for in your mix and cook 2-3 min more, until evenly coated and sauce has thickened.
BUILD YOUR BOWLS. When the sweet potatoes are roasted and the beef is cooked, layer rice, beans, beef, sweet potatoes, and your favorite toppings, like cilantro-lime slaw, avocado, or salsa.
SERVE & STORE. Enjoy right away. Store leftovers in separate airtight containers in the fridge. Beef & sweet potatoes will stay fresh 3-4 days in the fridge.
