For The Sweet Potatoes

  • 1 ½ pounds Sweet Potatoes, diced
  • 2 TBSP Olive Oil
  • ½ tsp. Chili Powder
  • ¼ tsp. Salt
  • ¼ tsp. Cumin
  • ⅛-¼ tsp. Chipotle Chili Powder

For The Beef

  • 1 teaspoon Olive Oil
  • 1 pound Ground Beef (I like 93% lean)
  • 1 pkg. Taco Seasoning (I like Siete Mild)

For The Bowls

  • 1 (15 oz) can Black Beans
  • 2-3 cups Shredded Lettuce OR Cilantro Lime Slaw
  • 1 Avocado, sliced (or Guacamole)
  • Cotija or Cheddar Cheese (optional--omit for dairy-free!)

  • 2-3 cups Cooked Rice (I like Cilantro-Lime Rice)
