- ROAST SWEET POTATOES. Preheat oven to 400° F. In a large bowl, combine sweet potato cubes, olive oil, chili powder, salt, cumin, and chipotle chili powder. Stir to combine, then spread out in an even layer on a sheet pan. Roast 25-30 minutes, stirring once halfway through cooking.
- WHILE POTATOES ROAST, COOK BEEF. Heat 1 tsp. olive oil in a large skillet over medium heat. Add ground beef and cook 8-10 minutes, or until cooked through. If needed, drain extra fat from the pan (I never need to since I use lean beef). Add taco seasoning and any water called for in your mix and cook 2-3 min more, until evenly coated and sauce has thickened.
- BUILD YOUR BOWLS. When the sweet potatoes are roasted and the beef is cooked, layer rice, beans, beef, sweet potatoes, and your favorite toppings, like cilantro-lime slaw, avocado, or salsa.
- STORE. Store leftovers in separate airtight containers in the fridge. Beef will stay fresh 3-4 days in the fridge.

Prep Ahead Tips For Busy Days
- START RICE FIRST. If you’re cooking rice, start that before you put the sweet potatoes in the oven, so everything’s ready at the same time!
- MAKE AHEAD. This dinner comes together fairly quickly, since you can finish all the prep while the sweet potatoes roast, but if you need to get ahead, you can mix up the cilantro-lime slaw, dice sweet potatoes, or measure out your rice in advance to speed things up later!
- BOOST THE PROTEIN. I much prefer these bowls with cotjia, cheddar, or no cheese, but you can borrow a trick from a Tik-Tok trend and add a scoop of cottage cheese instead for an extra boost of protein!

Pack An Even Bigger Protein Punch. If you’ve seen the TikTok viral sweet potato beef bowl, you’ll know where I’m going with this. Cottage cheese. Sounds crazy, maybe, but with the seasoned beef, creamy avocado, and chipotle sweet potatoes, a scoop of cottage cheese instead of a sprinkle of cheddar or cotija is a great way to add extra protein to this meal. (It’s also a great idea for meal prep!) If you really want to go for the original trend, skip the avocado and salsa and add a drizzle of hot honey on top of the cottage cheese & beef!
Chicken or Turkey Works, Too! If it works better for your dietary needs, taste buds or budget, ground chicken or ground turkey can be substituted in for the beef!
More Goodies To Add. Feel free to mix and match toppings to keep things interesting! Try some fajita veggies (bell pepper + onion), cauliflower rice, a dollop of sour cream, some pico de gallo or salsa, a little bit of pickled red onion…you name it! - 1 ½ pounds Sweet Potatoes, diced
- 2 TBSP Olive Oil
- ½ tsp. Chili Powder
- ¼ tsp. Salt

- 1 pound Ground Beef (I like 93% lean)
- 1 pkg. Taco Seasoning (I like Siete Mild)
For The Bowls
- 1 (15 oz) can Black Beans
- 2-3 cups Shredded Lettuce OR Cilantro Lime Slaw
- 1 Avocado, sliced (or Guacamole)
