This Egg Casserole Never Misses
I’m a sucker for breakfast for dinner, and this Hash Brown Patty Egg Bake has been on repeat at least once a month at my house lately. Both my kids love it (and one usually doesn’t like sausage and one doesn’t usually like eggs!).

How To Make This Hash Brown Egg Bake, Step By Step

- PREHEAT & PREP. To start, preheat the oven temperature to 350 degrees F. lightly grease a 9×9 baking dish. I like a glass or ceramic 9×9 casserole dish for this, since it conducts heat more gently!
- BROWN THE SAUSAGE. In a large skillet, brown the sausage over medium heat until it’s fully cooked through and slightly crispy on the outside. Drain excess grease from the pan and add cooked sausage to the bottom of the baking dish.
- WHISK EGG MIXTURE. While the sausage cooks, prep your other ingredients. In a large bowl, combine eggs, egg whites, cottage cheese, salt and pepper. Make sure the egg whites are well blended. Pour egg mixture over the sausage. (If desired, you can cover the dish with plastic wrap or aluminum foil and chill the casserole overnight at this point and finish it in the morning.)
- ASSEMBLE. Right before baking, sprinkle the egg mixture with cheddar cheese and add the hash brown patties on top. You should be able to fit 6 patties in a 9×9 pan!
- BAKE. Place the egg bake in the preheated oven and bake 40-45 minutes, or until the center is just set and only has a tiny wobble. (You don’t want it to slosh or look liquid.) Let the egg bake stand 5-10 minutes before cutting into slices.
- SERVE & STORE. Cut into 6 slices (I just slice in between the hash brown patties!) and serve warm. Store leftovers in an airtight container in the fridge 2-3 days.
PREP AHEAD: Get ahead on this easy breakfast casserole recipe by starting it the night before! You can brown the sausage, mix up the egg mixture and cover that overnight in the fridge. Just wait to add the cheese and hash browns until right before baking the next morning so they don’t get soggy or sink.


What To Serve With This Dish
This hash brown patty egg casserole is a great recipe on its own, and 9 times out of 10, I’ll just serve this with some fresh fruit and call it a day, but if you’re making it for a special occasion, weekend brunch, or holiday breakfast, these are some of our favorite pairings…
- FRESH FRUIT. Some ripe strawberries and blueberries, grapefruit, or a nice fresh fruit salad are always a win! Or, put out some granola and yogurt along with the fruit for parfaits!

FAQ + Tips And Tricks For The Best Hash Brown Patty Egg Casserole
Do I Have To Use Egg Whites? You can swap the egg whites for 2 more whole eggs if you don’t keep them on hand! It’ll have a texture more similar to our Tortilla Quiche, and it’s also delicious.
Can’t Find Hash Brown Patties? Use tater tots instead! They’ll work better than traditional shredded hash browns and will crisp up the same way hash brown patties do. I don’t recommend shredded potatoes here, since they’ll sink and won’t crisp up the same.
Can I Add Veggies? I bet you can! Some sauteed bell peppers and onions would be delicious added to the bottom layer with the sausage. Green chilis, sliced green onions, or caramelized onions, would all be great options, too!
More Variations To Try. This is my go-to combination for a cheesy hashbrown breakfast casserole, but you can absolutely use it as a recipe base and play with it! Feel free to swap the sausage out for crispy bacon or cooked, diced ham (great for leftover holiday ham!). You can also play with the cheese, depending on your mix-ins. Feel free to use Pepper Jack Cheese, Monterey Jack Cheese, Swiss Cheese, Gruyere Cheese, or your favorites!
