Peanut Butter and Honey Oatmeal – It’s as simple as it gets, but this yummy peanut butter oatmeal is one of my FAVORITES! (Gluten free, dairy free)

I know that oatmeal isn’t usually something to look at.

At all.

And a lot of us have flashbacks of eating mostly cold pasty mush when we think of oatmeal.

But this is different! I promise.

It’s just the right amount of sweet, has a great texture, and is incredibly fast to make. Oh, did I mention it’s ridiculously inexpensive? Oh, because it’s REALLY inexpensive.

If your morning are rushed, you can pack this dry in a container then add water when you get to work and presto! Breakfast in 1 minute. In the winter, I’d even take this for a warm lunch some days. It just seemed to hit the spot–warm, comforting–you’ll love it.

Oatmeal makes a great breakfast. This whole grain has soluble fiber to help keep you full, and is very welcoming of new flavors. I like using old-fashioned rolled oats for this–I find that instant oats or quick-cooking oats just turn to mush–but you can certainly use quick-cooking oats if you prefer. The same concept works well with almond or cashew butters as well. You can even garnish with chopped nuts for extra crunch.

I know it’s silly to post a “recipe” for oatmeal, but I’ve loved it and if you’re looking for a way to change things up, well, this is it.

Ingredients

Scale
  • 1/4 cup old-fashioned rolled oats*
  • 1 Tablespoon peanut butter (I prefer crunchy)
  • 12 teaspoons honey
  • 1/2 cup water


Instructions

  1. Put all ingredients in a cereal bowl and microwave 60-90 seconds. Stir to combine. Drizzle with additional honey if desired.
  2. Makes 1 serving

*For a gluten free option, be sure to use certified gluten free oats.

  1. I love making this, I eat it for breakfast most days (goes great with a mug of coffee too!). Also for lunch or dinner if I’m hungry but not ‘super’ hungry, it never gets boring to eat 🙂

  2. I eat almost this exact thing almost every day and never tire of it. Although, I like to add blueberries. It’s a complete meal!

  3. This is totally my new go-to oatmeal recipe. I’ve been meaning to comment forever. I think maybe I even did but never pressed submit? Anyway, this is perfection. Sometimes I’ll add a few chocolate chips just because. Sometimes I’ll add a little soy milk or yogurt to make it extra creamy, or dried cherries… it’s the perfect basic, tasty recipe. Win!

  4. I eat this about 5 times a week and love it! I also like the instant oatmeals with maple and brown sugar, however, peanut butter and honey is healthier than maple and brown sugar….less processing and more natural, not to mention the protein is great from the peanut butter and the sweetness from honey is so much better than processed sugar and artifical flavor. If you can get local honey, then this is even that much better!!

  8. i don’t think it’s silly to post a recipe for oatmeal at all! i’m pretty happy with my maple and brown sugar oatmeal, but this looks too good to miss!
