No-bake cookies. Most people love ’em or hate ’em. I’m on Team Love.

Like most people, I think my mom’s recipe (warning: super ugly/bad/old picture) is the best, but I’m not too judgmental in the realm of no-bakes. Pretty much if chocolate, peanut butter, and oats are present, you can count me in.

But Sunday, I got to thinking… what if I added coconut?

I had a roommate in college who made coconut no-bake cookies. I haven’t the foggiest idea what her recipe was, but I figured, I could adapt one and toss in a bit of coconut.

Oh. Baby.

I was in love. I used my Gramma’s recipe for no-bakes and tweaked it a bit (decreasing the oats and adding in some coconut). I thought they turned out great! I loved the flavor and texture. I even refrigerated some and ate them cold. Heaven on earth and dangerously addictive.

So, next time you’re in the mood for no-bakes, give these a go. I don’t think you’ll be disappointed.

Coconut No-Bake Cookies

Ingredients

Scale
  • 1/2c butter
  • 1/2c milk
  • 2c sugar
  • 3 Tbsp cocoa
  • 1/2c peanut butter (I like crunchy)
  • 3 Tbsp corn syrup
  • 1 tsp vanilla
  • 1/4tsp salt
  • 2 1/2c oats (I used quick oats here)
  • 3/4c shredded coconut


Instructions

  1. In a large saucepan, bring butter, milk, sugar, and cocoa to a boil over medium heat, stirring often. Remove from heat and stir in peanut butter, corn syrup, vanilla, and salt. Stir in oats and coconut.
  2. Drop by spoonfuls onto waxed paper or a silicone baking mat to cool. (If you’ve never made no-bake cookies before, they set up as they cool, so don’t be afraid if they seem a bit fluid).

  1. I often use that recipe as a base but change a bit of stuff as I’m lastose intolerant and I also put less sugar in my baking, and use some alternative for taste and some bit healthier(?) ingredients. Also I’m European so I converted it in grams.

    Here’s the recipe :

    **** 🍪Coconut&Chocolate no-bake Cookies🍪****
    – 115gr of 100% plant-based margarine
    – 250gr of milk (I usually use Oat milk for this recipe, but Soya milk or Hazelnut&Rice milk goes nicely with this recipe too💜)
    – 110gr of coconut sugar or xylitol (any other natural sweetener can be a replacement here, I’m pretty sure)
    – 4 tbsp of unsweetened cocoa powder
    – 150gr of almond/cashews butter (I definitely suggest you the 100% paste, the unsweetened one yk. You can replace it with peanut butter, but still unsweetened and 100% is the healthiest option imo in any cases💜)
    – 3 tbsp of agave syrup (if you can’t find any, I suggest a creamy type of honey to replace it)
    – 1 tsp of vanilla
    – 1/4 tsp of salt
    – 225 gr of oat
    – 100gr shredded unsweeted coconut

    1. Tony – I don’t for a second think these are healthy cookies. They’re absolutely a treat we enjoyed in the past before our diet changed. They’re very nostalgic for me since my Grandma used to make them for us. I haven’t had one for a few years, but they’re a happy memory and I don’t apologize for them. Sorry they weren’t for you!

  2. Ya so I doubled the coconut! YUM! And I didn’t have corn syrup. I used special dark cocoa (all I have). Sinfully addictive!!!! Thanks for the idea!

  5. i grew up on no bakes (aka dogpiles in our house!!) with coconut. however, kevin is NOT a fan of coconut so i haven’t made them with for years. but i did add peanut butter to the recipe i’ve used forever and i looooooooooove them! i could eat the warm gooey batter right off the spoon and in fact, leave a large portion ON the spoon and lingering in the pot just so i can do just that!!! 🙂 now i’m missing the coconut ones of my youth…
