Sun-ripened tomatoes and fresh basil are at their best in summer, which makes it the perfect time to make this easy burrata salad recipe. It’s perfect for a lazy summer evening or summer dinner party!

Gather Your Ingredients

  • Fresh Cherry Tomatoes. Colorful fresh tomatoes add a beautiful pop of color to this fresh summer salad. I like a mix of red and yellow tomatoes for extra color, but use what you can find, whether that’s all red or some colorful heirloom tomatoes from the farmer’s market! 
  • Fresh Basil. A must here! Dried basil just won’t do. You need the peppery bite and vibrant color of fresh basil, for best results.
  • Balsamic Vinegar. A good-quality balsamic vinegar adds sweetness, brightness, and tanginess to this salad, making it taste vibrant and fresh. Some people prefer to use red wine vinegar here, but I love the richness of a good balsamic.
  • Olive Oil. A drizzle of olive oil helps round out the dressing for this simple salad, while brushing the baguette slices with a little olive oil helps them toast nicely.
  • Garlic. You’ll need a little bit of garlic for the tomato salad, then you’ll rub a fresh garlic clove over the toasted baguette for an extra layer of flavor.
  • Salt & Pepper. These simple seasonings are SO KEY! I prefer to use freshly ground black pepper and flaky sea salt for a bigger impact, but use what you have!
  • Burrata Cheese. If you’ve never had it before, burrata is a ball of fresh mozzarella stuffed with a creamy filling called stracciatella–strands of fresh mozzarella with cream. The exterior is like soft mozzarella cheese, while the inside is creamy and spreadable with a buttery flavor and rich texture that takes it to the next level. Perfect for dipping, dunking, and savoring!
  • Gluten-Free Baguette. We’re gluten-free, so we reach for gluten-free baguettes, like Schar or Trader Joe’s gluten-free baguettes to stay Celiac safe. Not gluten-free? A regular baguette will do!
  • Maybe Some Extras. A little sprinkle of red pepper flakes, a little fresh parsley, a drizzle of tangy balsamic glaze, or some finely minced shallot or red onion can be great additions here!

How To Make Burrata Salad, Step By Step

  1. Prepare The Baguettes. Thinly slices the baguettes and brush with olive oil. Place on a lightly greased baking sheet in a single layer. Toast in preheated oven at 375 degrees 8-12 minutes, flipping halfway through, until they are crisp and slightly golden brown. Rub with garlic clove for extra flavor and set aside to cool.
  2. Combine. In a large bowl, combine halved cherry tomatoes, olive oil, balsamic vinegar, fresh basil, minced garlic, salt and pepper. Gently stir to combine.
  3. Prep Burrata. Right before serving, tear or cut the balls of burrata in half and place them cut side up on a large platter.
  4. Assemble. Use a slotted spoon to surround the burrata with the tomatoes, then drizzle some of the balsamic vinaigrette over the top of the burrata and salad. Garnish with balsamic glaze, an additional sprinkle of salt and pepper, fresh basil leaves, or some red pepper flakes.
  5. Serve. Enjoy with toasted baguette slices. (I set out a knife or cheese knife to cut or scoop from the burrata and a spoon to scoop up tomatoes.)

Serving Ideas To Try

I mean, good luck not eating it all yourself (the struggle is real!), but here are a few ways to serve Burrata salad…

  • Try It As An Appetizer OR A Side Dish! Serve this burrata salad next to some balsamic-marinated grilled chicken, some pesto salmon, or a grilled steak. Or, use it as an appetizer for your favorite summer pasta dishes!
  • Expand it Into Light Bites! Serve this easy salad next to a plate of salty prosciutto or charcuterie and a bowl of arugula salad or a classic caesar salad to make it into a light meal.
  • Use The Leftovers. If you have any leftover (lucky you!), you can spoon it over chicken, or tuck it into a wrap with turkey or chicken and some mixed greens, lettuce, or peppery arugula the next day.

FAQ + Tips And Tricks For The Best Burrata Salad

Keep An Eye Out For Minis! While we usually use standard 4-ounce balls of burrata, keep an eye out at your grocery store for mini 2-ounce balls that can work well for a crowd or littler eaters. (Belgioso makes them, but not all grocery stores carry them!)

Storage Tips. Store leftover tomato salad 1-2 days in the fridge and the baguette slices in a an airtight container at 1 day at room temperature. You’ll want to reheat the baguettes in the oven the next day to help them crisp back up!

Keep It Gluten-Free. Regular baguettes are NOT gluten-free, so if you’re making this gluten-free (like we do!), you’ll need to use gluten-free baguettes. We have had good luck with Schar and Trader Joe’s gluten-free baguettes!

Ingredients

For The Toasted Baguette

  • 1-2 Baguettes, thinly sliced *Gluten-Free As Needed!!!
  • 2 Tablespoons Olive oil
  • 1 clove Garlic (slice the tip off one end)

For The Burrata Salad

  • 12-16 ounces Cherry tomatoes halved
  • 2 Tablespoons Olive oil
  • 2 Tablespoons Balsamic vinegar
  • 1-2 Tablespoons Fresh basil thinly sliced
  • 1 clove Fresh garlic (finely minced)
  • 1/2 teaspoon Flaky salt
  • 1/4 teaspoon Black pepper
  • 8 ounces Burrata mozzarella cheese (I usually use two 4-ounce balls)*

Optional, For Garnish

  • Balsamic glaze
  • Additional basil leaves
  • Red pepper flakes
  • Flaky sea salt & black pepper

Instructions

Prepare The Baguettes

While The Baguettes Toast, Make The Tomato Salad

  • Combine. In a large bowl, combine halved cherry tomatoes, olive oil, balsamic vinegar, fresh basil, minced garlic, salt and pepper. Gently stir to combine.
  • Prep Burrata. Right before serving, tear or cut the balls of burrata in half and place them cut side up on a serving platter.
  • Assemble. Surround the burrata with the tomatoes and drizzle some of the tomato dressing over the top of the burrata. Garnish with balsamic glaze, additional salt and pepper, fresh basil leaves, or some red pepper flakes.

    This amazing recipe tastes like summer. The freshness of the basil and tomatoes matched the creaminess of the cheese flawlessly. But it is the dressing that really makes the whole dish amazing!
