Green-A Colada Popsicles = Kid-Friendly Piña Colada Popsicles With a Healthy Twist!

I’ve been making homemade popsicles since my kids were tiny, and one thing I’ve found is that even kids who refuse their veggies are more likely to eat them when they’re tucked into a popsicle! (It makes sense–popsicles can be green!)

That’s definitely true of these Green-a Colada Popsicles! They’re a big hit with kids, and for good reason!

  • THEY’RE EASY TO MAKE. These delicious pina colada popsicles are as easy as blend, strain, pour, freeze. That’s it! This easy recipe is all about simple ingredients & simple techniques that are easy enough for your kids to help with.
  • THEY’RE DELICIOUS. These truly don’t taste like veggies. Instead, you’re getting the tropical pineapple and coconut flavors of a classic piña colada, just in popsicle form! (Made without the alcohol, of course!)
  • THEY’RE NOURISHING. These green piña colada popsicles are made with real fruit, a little spinach, and they’re even naturally sweetened. No artificial dyes or refined sugar required!

Gather Your Ingredients

These green piña colada popsicles are a twist on our healthy piña colada smoothie, with a few tweaks and twists. Here’s what you’ll need to get started on this healthy sweet treat:

  • Pineapple. You can use fresh pineapple OR frozen pineapple for these tropical popsicles! I often use frozen pineapple, since it’s already prepared, inexpensive, and easy to keep on hand.
  • Coconut Milk. I usually use full-fat canned coconut milk for these, but you can use light coconut milk for an icier popsicle, or coconut cream for a richer, creamier popsicle.
  • Pineapple Juice (& Maybe Some Lime Juice). Next, to play up the tropical flavors, you’ll need some pineapple juice. If you want, you can also add a little fresh lime juice for brightness, but it’s not strictly necessary.
  • Honey or Agave Syrup. Next, for some natural sweetness, you’ll need a bit of honey. If you’re vegan, or want a more neutral flavor, feel free to use agave syrup instead.
  • A Few Drops of Coconut Extract. I LOVE the flavor that just a drop or two of coconut extract adds to these pineapple coconut popsicles. It really gives them that pina colada flavor!
  • A Little Fresh Spinach. Then, to put the green in these greena colada popsicles, you’ll use some spinach. It blends well, it’s got a super mild flavor, and it adds an extra layer of nutrition to these yummy pops! It’s the most fun way to eat your greens I can think of!

My Favorite Popsicle Mold

I’ve literally made HUNDREDS of homemade popsicles over the years and this popsicle mold is my all-time favorite. It comes with a lid to help hold the popsicle sticks in place, can balance well in the freezer, and doesn’t hold on to flavors the way a silicone mold does. It’s great for these green-a colada popsicles!

How To Make These Pineapple Coconut Popsicles, Step By Step

  1. Combine. Add frozen pineapple, coconut milk, pineapple juice, honey, spinach, and coconut extract. (Add lime juice, if using.)
  2. Blend. Puree until the smoothie is completely smooth, pausing to scrape down the sides, as needed. Try not to rush, so you can get the spinach super smooth! Taste the smoothie and add more coconut extract, sweetener, or lime juice, to taste.
  3. Strain. Pour the mixture through a fine mesh strainer, if desired. I recommend this for picky eaters or anyone texture sensitive, so the popsicles won’t be gritty or stringy.
  4. Freeze. Pour the strained popsicle mixture into your popsicle mold. Cover with a lid and insert popsicle sticks. Place on a level surface in your freezer and freeze for at least 4-5 hours, or until green-a colada popsicles are completely solid.
  5. Serve & Store. To release from popsicle mold, run the wells of the popsicle mold under cool water (not warm water or hot water, or they’ll melt!) for a few seconds and use a side-to-side motion to release popsicle from the mold. Store leftover popsicles in a single layer in an airtight freezer bag in the freezer up to 2 weeks.

FAQ + Tips And Tricks For The Best Piña Colada Popsicles

DON’T FORGET A POPSICLE MOLD! I can’t say enough great things about this popsicle mold. It’s easy to use, reliable, and will last YEARS. I’ve had mine for 8+ years, and it’s still going strong! It’ll work like a charm for this delicious homemade popsicle recipe.

DO I HAVE TO STRAIN THIS? No, but I do recommend it if you have a texture-sensitive kid, since blended pineapple can sometimes get a bit stringy in the freezer. Straining out extra pulp will give these homemade popsicles the smoothest, creamiest texture.

A TRICK FOR BLENDING SPINACH. If you don’t have a high-speed blender (like a Ninja, Vitamix, Beast, Blendtec, etc.), I recommend blending the spinach with the coconut milk and pineapple juice BEFORE adding the other ingredients to help break it down better. It’s another trick for great texture for these green-a colada popsicles!

  1. Just made this one and loved it. My blender is sort of weak sauce so it needed more liquid to get it to blend, but the texture and flavor are so good.

    This recipe came out great! My blender died so I actually ended up using a food processor (I added another 1/4 cup of orange juice so it wasn’t as thick because I used a food processor). Thanks for the tip about blending the spinach and coconut milk, it made it taste so much better!!!

    1. Elyse – I found mine in the dollar spot at Target last summer. They’re 4 to a container (I bought 2). Then I bought popsicle sticks in the craft section at Target.

  4. YUUMMMY! WE need to try these soon 🙂 Also need to get some popsicle molds too, but until then I think Ill just use icecube trays… actually that might be better for Jackson anyways. He can never finish a full popsicle in time 🙂
