When Ground Beef and Sweet Potato Burrito Bowls went viral on TikTok a few years back, it seemed like EVERYONE had a fun spin on them. I’m super partial to mine. They’ve got so much going for them! (No cottage cheese required!)

  • They’re EASY. These sweet potato beef burrito bowls are made with simple, nourishing ingredients and simple techniques. Nothing fancy required! But don’t be fooled…
  • They’re SO FLAVORFUL. Simple doesn’t mean boring! We layer in extra flavor with taco-seasoned beef, a homemade spice mix for the sweet potatoes, and a few other little flavor boosters to take them to the next level.
  • They’re HEALTHY & ACCESSIBLE. Build-your-own dinners like this are great for families, since everyone can build theirs just the way they like it! Plus, the ingredients are budget-friendly, and who doesn’t need that right now!?

  • Ground Beef. Lean ground beef is our protein here! I usually use 93% lean so I can pack in plenty of protein without skimping on flavor, but feel free to use whatever percentage works best for your dietary needs or budget!
  • Taco Seasoning. While you can absolutely use our homemade gluten-free taco seasoning blend, I usually use a packet of Siete taco seasoning to keep things easy on a busy weeknight, since we’re doing a homemade seasoning blend on the sweet potatoes.
  • Sweet Potatoes. I look for red garnet sweet potatoes for a beef and sweet potato bowl, since they’ve got such great flavor and texture, but any good quality sweet potato works here!
  • Olive Oil. Just a bit, for roasting. Don’t skip it, or your sweet potatoes won’t be crisp!
  • A Quick Smoky Seasoning Blend. For the sweet potatoes, we don’t skimp on flavor! You’ll use pantry staples like chili powder, chipotle chili powder, kosher salt, and black pepper.
  • Black Beans. Then, we’re adding extra flavor with a can of black beans. (Or, you can cook these Instant Pot Black Beans, made with dry black beans!)
  • Lettuce or Cilantro-Lime Slaw. For a little freshness and crunch, I like adding lettuce or some of our famous Cilantro Lime Slaw. We LOVE the color and flavor of this slaw when you’ve got an extra 5 minutes to make it!
  • Avocado or Guacamole. For some creaminess, fiber, and healthy fats, add some fresh avocado slices or some homemade guacamole.
  • Cheddar or Cotija Cheese. If you tolerate dairy, some shredded sharp cheddar cheese or a sprinkle of Cotija cheese adds great flavor! (Monterey Jack and Pepper Jack are also delicious!)
  • Maybe Some Cilantro-Lime Rice. If you need some extra carbs (or another component you know your kids will eat!), this cilantro lime rice adds another great layer of flavor.

How To Make Sweet Potato Beef Burrito Bowls, Step By Step

  1. ROAST SWEET POTATOES. Preheat oven to 400° F. In a large bowl, combine sweet potato cubes, olive oil, chili powder, salt, cumin, and chipotle chili powder. Stir to combine, then spread out in an even layer on a sheet pan. Roast 25-30 minutes, stirring once halfway through cooking.
  2. WHILE POTATOES ROAST, COOK BEEF. Heat 1 tsp. olive oil in a large skillet over medium heat. Add ground beef and cook 8-10 minutes, or until cooked through. If needed, drain extra fat from the pan (I never need to since I use lean beef). Add taco seasoning and any water called for in your mix and cook 2-3 min more, until evenly coated and sauce has thickened.
  3. BUILD YOUR BOWLS. When the sweet potatoes are roasted and the beef is cooked, layer rice, beans, beef, sweet potatoes, and your favorite toppings, like cilantro-lime slaw, avocado, or salsa.
  4. STORE. Store leftovers in separate airtight containers in the fridge. Beef will stay fresh 3-4 days in the fridge.

Prep Ahead Tips For Busy Days

  • START RICE FIRST. If you’re cooking rice, start that before you put the sweet potatoes in the oven, so everything’s ready at the same time!
  • MAKE AHEAD. This dinner comes together fairly quickly, since you can finish all the prep while the sweet potatoes roast, but if you need to get ahead, you can mix up the cilantro-lime slaw, dice sweet potatoes, or measure out your rice in advance to speed things up later!
  • BOOST THE PROTEIN. I much prefer these bowls with cotjia, cheddar, or no cheese, but you can borrow a trick from a Tik-Tok trend and add a scoop of cottage cheese instead for an extra boost of protein!

FAQ + Tips And Tricks For The Best Beef & Sweet Potato Burrito Bowls

Pack An Even Bigger Protein Punch. If you’ve seen the TikTok viral sweet potato beef bowl, you’ll know where I’m going with this. Cottage cheese. Sounds crazy, maybe, but with the seasoned beef, creamy avocado, and chipotle sweet potatoes, a scoop of cottage cheese instead of a sprinkle of cheddar or cotija is a great way to add extra protein to this meal. (It’s also a great idea for meal prep!) If you really want to go for the original trend, skip the avocado and salsa and add a drizzle of hot honey on top of the cottage cheese & beef!

Chicken or Turkey Works, Too! If it works better for your dietary needs, taste buds or budget, ground chicken or ground turkey can be substituted in for the beef!

More Goodies To Add. Feel free to mix and match toppings to keep things interesting! Try some fajita veggies (bell pepper + onion), cauliflower rice, a dollop of sour cream, some pico de gallo or salsa, a little bit of pickled red onion…you name it! You can even put some cilantro lime ranch in a squeeze bottle to drizzle on top!
