With Easter just around the corner, followed by Mother’s Day, spring baby showers, and summer potlucks, parties, and backyard barbecues, this rainbow fruit salad with honey lime dressing couldn’t have come at a better time!

Not only does it come with all the different colors of the rainbow, this easy fruit salad is drizzled in a fresh, bright lime dressing you won’t be able to resist.

It’s the perfect complement to all kinds of delicious brunch and dinner favorites, and it’s an easy way to add some color to your meal!

Simple Ingredients To Get STarted

This recipe uses LOTS of colors to make a beautiful and delicious rainbow fruit salad that’ll be on repeat all spring and summer long. My goal was to hit all the colors of the rainbow with different fruits–red, orange, yellow, green, blue, and purple. Fresh fruit makes this easy!

  • RED = STRAWBERRIES. With their vibrant red color and perfectly sweet flavor, fresh strawberries are the perfect start to our rainbow.
  • ORANGE = CLEMENTINES. These small oranges (sometimes called mandarin oranges, Cuties, or Halos) are a juicy addition. I prefer fresh clementines to canned, but use what you can find!
  • YELLOW = PINEAPPLE. Another tropical, citrus note! I love to finely dice fresh pineapple so it’s the same size as the other fruit
  • GREEN = KIWI. Fresh kiwi adds a vibrant green that really stands out. I peel kiwi before using it!
  • BLUE = BLUEBERRIES. Just like in our Honey Lime Fruit Salad, blueberries hold up beautifully with this dressing. (Bonus: It’s one of the only ways my kids love fresh blueberries!)
  • PURPLE = PURPLE GRAPES. Sometimes labeled as red grapes, purple grapes add a pretty purple hue to round out our rainbow of colors!
  • HONEY LIME DRESSING. Then, to tie it all together, we use a simple honey lime dressing made from lime zest, fresh lime juice, and honey (or agave, for a vegan version). This tangy dressing takes the salad to a whole new level!

How To Make Rainbow Fruit Salad, Step BY Step:

  1. Mix Up The Dressing. To start, combine lime juice, honey or agave, and lime zest in a small bowl or jar. Whisk until well combined. (The dressing can be made a day in advance and refrigerated, if needed.)
  2. Combine Fruit. In a large bowl, combine strawberries, mandarin oranges, pineapple, kiwi, blueberries, and halved purple grapes.
  3. Dress The Salad. Drizzle the fruit salad dressing over the fruit. Gently stir to combine and enjoy within 2 hours for the best texture.
  4. Serve & Store. Leftover fruit salad can be stored in an airtight container in the fridge 2-3 days.

Variations & Swaps To Try

There are two main ways you can play with this rainbow fruit salad recipe. The first, is to change up the variety of fruit you use, and the second is to try a twist on the dressing!

More Fruit To Try

  • Reds/Pinks: Red raspberries, sweet cherries, pomegranate arils, or red apples
  • Yellows & Oranges: Golden kiwi (it’s yummy!), fresh mango, banana, or star fruit.
  • Green: green grapes, diced green apples
  • Blues & Purples: blackberries, black grapes
  • White: dragonfruit (it’s so interesting!)

Play With The Dressing!

  • Add Mint! For a delicious citrus-mint dressing, try adding 1-2 Tablespoons of fresh mint to the dressing. It’s fresh and light–so good in summer!
  • Try A Citrus Twist. For a citrus dressing twist, try adding 1-2 Tablespoons fresh orange juice along with the lime juice (I reduce the honey to 1 Tablespoon when I do this). The orange + lime work so well together!

FAQ + Tricks For The Best Fruit Salad

VEGAN? READ THIS! Most of my citrus fruit salad dressings use honey, but agave syrup is a fantastic vegan option you can easily substitute here. I love it just as much!

CAN I MAKE FRUIT SALAD IN ADVANCE? Yes, BUT I don’t recommend making it hours and hours ahead of time. The citrus juice and natural sugars in the dressing break down the walls of the fruit over time, so the longer this sits, the softer all the fruit gets. You can get away with 1-2 hours ahead of time, but I typically mix up the fruit and the dressing and keep them separate until a few minutes before serving for the best texture.

HOW LONG WILL LEFTOVERS KEEP? Again, because of the dressing, it’ll continue to soften, so it’s best eaten in 2-3 days. I’ll often blend leftovers the next day with some ice to make a smoothie (SO GOOD) or I’ll pour the puree into popsicle molds for incredible fruit popsicles (we LOVE these!).

For the Rainbow Fruit Salad:

  • 2 cups diced strawberries
  • 2 cups clementine segments (about 4 Cuties/clementines)
  • 2 cups finely diced fresh pineapple
  • 2 cups fresh blueberries
  • 2 cups diced kiwi (46 kiwi)
  • 2 cups halved purple grapes

For Honey Lime Dressing:

  • 2 teaspoons fresh lime zest (zest of 1 lime)
  • 2 Tablespoons fresh lime juice (juice of 1 lime)
  • 2 Tablespoons honey (or agave, for vegan)

Instructions

Notes

  • Serve It In Rows. Alternatively, you can serve the fruit in unmixed in rows on a platter in rainbow order–Strawberries, clementines, pineapple, kiwi, blueberries & purple grapes. Then, drizzle or spoon the dressing over everything without mixing. This can be cute for St. Patrick’s Day!

  1. I made this last night to bring to friends to go with a fresh caught fish dinner. We opted to serve it as dessert, which was an excellent choice. Light, fresh, slightly sweet…delicious and different! My husband and I eat Paleo, but our friends eat a SAM and they loved it too!

  3. Made it for the first time last month, my grandson and his new bride asked me to bring some for his 29th birthday BBQ together with my signature potato salad.

  4. This was delicious! Subbed pineapple for the mango and kiwi, so not as colorful, and didn’t have OJ, so just left it out. The mint and lime really did brighten up the whole thing. Will add the OJ next time. It was fine without it, but I think it will sweeten it just a touch and make it even better!
