I’m all about saving time and energy in the kitchen, and one of the best ways I’ve found to do that is to make good use of my leftovers. Making your leftovers do double-duty is a great way to save time, energy, and money (no waste!) in the kitchen.

Sometimes, that’s as easy as using up your leftover chicken. Whether you’ve baked, grilled, poached, or roasted it, or are simply using up the rest of a rotisserie chicken from the store, here are 10 delicious leftover chicken recipes for using up those leftovers!

1. Dairy Free Chicken & Vegetable Risotto

This easy chicken vegetable risotto is such a family favorite. It’s cozy and comforting and really low-fuss. I’ve got a few tips and tricks that make it faster than traditional risotto without losing any of the flavor!

Turns out, homemade taquitos really aren’t that hard! Mix your leftover chicken with a simple spice blend, then roll it up in corn tortillas, brush with olive oil, and bake. Easy! The only tough decision is deciding what to dip them in… guacamole and salsa are my favorites!

Soups are a great way to use leftover chicken. This Salsa Verde Chicken and Rice Soup is one of my FAVORITE soups of all time. The flavor is INCREDIBLE and gets even better the next day. The tortilla strips aren’t strictly necessary, but if you’ve got time…you won’t regret making them. (YUM!)

10. Fall Cobb Salad with Cider Vinaigrette

A good Cobb salad is tough to beat (seriously–do you see all those goodies!?). It’s *almost* fall and I can’t wait to start making this again as soon as cider is back in stores. We make variations of this all year round. I love the rosemary croutons and the cider vinaigrette, but you can easily mix and match here. It’s also delicious drizzled with homemade ranch or poppy seed dressing or with some chopped nuts or pumpkin seeds instead of the croutons. Or, you can swap in seasonal vegetables if squash isn’t ready where you are.

  1. I keep diced or shredded cooked chicken breasts in the freezer to use for quick meals. And I sometimes have leftover grilled chicken, from our cookouts. These recipes will come in handy. Thanks!
